Job Title: Junior Sous ChefLocation: La Marchande, The Wall Street Hotel Chef John Fraser and La Marchande, located within The Wall Street Hotel, is seeking an experienced, passionate, and service-focused JuniorSous Chef to join our team. We offer a competitive salary and the opportunity to be part of a dynamic and highly skilled kitchen team. Key Requirements: Detail-oriented with a commitment to excellence and high standards. Strong organizational skills and the ability to consistently execute all pastry items and mise-en-place. Team-oriented and collaborative, with the ability to mentor and inspire junior kitchen staff. Prior managerial experience in a professional kitchen environment. Experience working with various kitchen technologies and systems to enhance efficiency and quality. NYC Food Protection Certificate is required. Responsibilities: Maintain excellent knowledge of food handling, processing techniques, and cooking. Accept and act on constructive feedback from kitchen colleagues and superiors. Work with a sense of urgency and purpose in a high-paced environment. Communicate inventory needs and product quality issues to the Executive Chef. Ensure cleanliness and organization of the basement prep area with a systematized approach to processing deliveries, maintaining cutting board cleanliness, and organizing mise-en-place efficiently. Label and store all mise-en-place in designated areas within the walk-in and prep basement. Proactively identify areas for improvement in day-to-day operations and work towards continuous refinement. Uphold exceptional standards of quality and execution in all culinary tasks. Ensure proper station breakdown and deep cleaning is executed with professionalism and pride.
